Hi all,
  I'm looking for some inspiration from my readers.  I want to know what it is that you just love to see on my blog.  Do you want more recipes, cleaning tips, crafting, repurposing ideas, couponing tips, my shopping trips, or homemaking tips?

Kitchen tip for livening up your rice...

Hi all,
  Is your rice a little bland?  Want to liven it up a bit?  Just substitute the chicken stock in place of the water.  That will take the plain, boring rice to a nice flavorful side dish.  I also add some parsley and butter to top it off.

  So, be sure to make some good 'ole chicken stock with those leftover bones, and stock up your freezer!  If you don't know how to do that.....stayed tuned for a post on stretching that roasted or baked chicken even further with just the bones. :)

Chicken Pot Pie...Mmmm!

Hi all,
  I just had to share with you the Chicken Pot Pie I made.  Thanks to Jessica at Life as Mom, who shared her recipe for chicken pot pie, we had a delicious dinner.  It was a hit!  Let me tell you, it was so simple!
 
  I have never made a homemade crust, but the recipe Jessica shared here was very easy.  I followed her recipe for the pot pie with the following adjustments:

~I just used the left over chicken we had from 2 nights before
~I didn't measure any veggies, I just took out a small mixed bag I had in the freezer, and I didn't add potatoes, but I plan to in the future

Next time, I think I will double the filling/sauce recipe, because it was so delicious we wanted more of that.  

  Since the family loved it so much, I've already added it to the recipe list I'm compiling to try to start freezer cooking.  So the next time I make this pie, I'm going to make at least three more at the same time following the freezing instructions Jessica shares directly underneath the recipe.

My Husband's Favorite Cake!

Hi all,
  My husband has never been much of a sweet eater, but he absolutely loves his aunt's chocolate cake.  He looks forward to every Christmas, because she has been known to make him his very own cake.

 So, my aunt gave me the recipe, (I don't know where it came from) I finally learned how to make it, and my husband is so happy!  The icing is actually made with granulated sugar instead of powder sugar which is what makes this cake soooo yummy.  It is just delicious, so I thought I would share it with you.

Now, I have made this cake three times, and the icing is a little different every time.  The key is how long you let it cool before you spread the icing.  You have to be sure not to let it cool too long, because it gets too stiff to spread.  You have to just use your judgement, and learn from trial and error.

  The picture above is my first attempt.  I couldn't have timed icing the cake any better.  I think it's better to start icing it while it is still pretty soft, but not runny.  I like it soft enough for when I'm done icing the top I can take a ladle and pour in a circle all around the edge and with a gentle nudge it will slooowly run down the side clingging to the cake. Which is why you can really see the layers of the cake, but I think it adds to the appeal of the homemade look. If you wait too long, it is harder to spread, and tends to tear up your cake. I found this out on my next two attempts.  That is why I say you will learn the timing through trial and error.  No matter what it is soooo tasty!




  Now, for the recipe. I first start with just a boxed yellow cake if I have one on hand, and if I don't I just use the Betty Crocker yellow cake recipe


  Here's the icing recipe: (It's a large batch, and I usually have some left over, but we like a really thick layer of icing :) )

Chocolate Frosting: (I multiply this by 3)
2 cups sugar (granulated)
1/4 cup cocoa
1/4 teaspoon salt
2/3 cup of milk
2 big tablespoons of crisco
1 big spoon of vanilla extract

Mix sugar, cocoa, and salt by itself.
Add milk, put over medium/high heat.
When milk gets warm, add crisco
Boil, and keep stirring for 20 minutes minimum, until mixture forms soft ball in cold water
Turn off, and take off eye
Stir well for a few minutes, then add vanilla
Let cool and stir for about an hour off and on (I usually end up icing the cake somewhere around 45 minutes, you just have the be your own judge on this)

Such beautiful snow!

Hi all!
  I just had to share a few pictures with you.  We get snow like this so rarely here in north Ga, that for us it's like a wonderful winter wonderland to explore.  DH, DD and I took a walk through the woods behind our house, and just thoroughly enjoyed the tranquil beauty!  It was like looking at a blanket of quiet peace.

  We decided not to go down this trail.  We hated the thought of ruining the perfect purity.  So instead we just admired the beauty and snapped a picture for posterity.


  Before returning from our walk to go sledding with the neighbors up the street, DH helped DD make this snow angel.

  Once we had sled down the hill (children and adults alike), and were good and frozen to the bone, we came in for lunch and hot chocolate.

  I'm sure there will be another sledding session in the near future.

  I hope all of you that got snow, you're enjoying your snow day, and staying safe!

Love my new Wilton Ultra II Cookie Press

Hi all,
  Here is one of the new toys I got for Christmas, the Wilton Cookie Pro Ultra II.  I just love it!  (Thank you "L" :) ) It is so easy to use, and I had no problem cleaning up after all the fun.  My DD and I had a blast trying all the different shapes.

  I just used the Krusteaz cookie mix that was on sale at Publix recently, and off we baked.  The cookies came out perfectly.

  We decorated them with some vanilla Betty Crocker frosting that I colored with the Wilton frosting dye.  I used my new piping bags, and tips I got for Christmas.  (Thanks to my aunt :) ) Piping was fun, but I need A LOT of practice. I just love getting new kitchen goodies!  I'm sure my DD and I will be baking lots of cookies in the near future, and having fun practicing our piping techniques. :)

Homemade chicken and rice soup

Hi all,
  I thought I would share with you the homemade chicken and rice soup recipe I made last night.  I had a lot of chicken left on my roasted chicken from the night before, so I decided to pull off all the meat and set aside.  Then I followed this recipe with a few minor changes.

  Step 1: I followed with these adjustments:  I only used about a 1/4 of an onion, because we are not much on onions around here, but I figured it needed it for the seasoning.  I didn't have minced garlic, so I just put in some garlic powder (sorry, I didn't measure...just threw some in).  I didn't have "seasoning salt,"  so I just threw some celery salt in there.

Step 2: I followed exactly.

Step 3: I did not add anymore onion.  I did not have any green beans, so I just used the left over canned corn I had in the fridge from the night before, and added some extra celery and carrots.  While the veggies were cooking in the broth, I made the rice separately on the stove.

Step 4:  Since my chicken was left over roasted chicken, it was already cooked and seasoned, so I just broke into small pieces and threw them in along with some butter.

Step 5:  I added the rice that I cooked on the stove top, and let soup simmer just a bit.  This is also where I taste tested to determine what seasonings I might need to add.  Needed more salt, a little more celery salt, pepper and a touch more of garlic powder.

This would have been great with some crusty garlic bread and a salad, but I had also made a cake with homemade chocolate icing (I'll share that in another post) that takes about 2 hours to make so I was just not motivated to do anymore! :) It was just fine alone, with the cake for dessert.  There was plenty left over for me to put some in the fridge for tomorrows lunch, and froze a large container for dinner another time.

Free Olay body wash at Dollar General!!!

Hi all,
  My local Dollar General has 8.4 oz. body wash on sale for $2.  There was a $2 coupon in the 12/26 P&G, making it free!  It did scan for $3, but when the total button was hit, it went down to $2.  Gotta love free body wash! I'm not sure how long it will be on sale.
