I just had to share this quick dinner I threw together a few nights ago. Early that day my DD wanted some spaghetti for lunch with no meat. She just wanted the noodles and sauce. So, I opened a can of tomato sauce and one can of diced tomatoes. I threw in some italian seasonings, garlic powder and a spoonful of brown sugar. I don't have exact measurements because I just did it to taste.
We had a great quick lunch with plenty of sauce left over. I took that leftover sauce at dinner time and poured it over the chicken I had thawed out. I cooked it in the oven for about 25 minutes. Then topped it with some shredded cheese and put it back in the oven just long enough for the cheese to melt.
I laid the chicken over rice and sprinkled with parsley. It was quick and delicious. The whole family loved it, so I will definitely make it again.
